Sweet Potato Doughnut
Ingredients:
550 Grams All purpose flour
195 Grams Brown sugar
50 Grams Sugar
10 Grams Baking powder
2 Grams Baking soda
2 Grams Salt
5 Grams Cinnamon
2 Each Eggs
244 Grams Sour cream
244 Grams Mashed sweet potato
45 Grams Trimoline
Method:
1. Combine potato puree, sour cream, eggs together, trimoline.
2. Add the dry and mix together using paddle.
3. Scrape down sides and mix again, just to ensure the dough is mixed completely.
4. Rest dough overnight or 12 hours.
5. Remove and sheet to 9, rest.
6. Punch with greased doughnut cutter.
7. Fry at 350f until golden, toss in cinnamon sugar.
